This lemonade is so refreshing and delicious. It is a wonderful calming way to drink lavender safely. I do not recommend drinking essential oils or mixing them with water, since they are not water soluble. But, making a wonderful tea from lavender leaves is safe, delicious, traditional, and also calming in its ritual. When I first made this, I was growing my own lavender. I wish I still had some lavender plants here in Louisiana! It was much easier to grow in New York. I hope you will try this delicious lemonade! Lavender is good for anxiety, headaches, sleep, and many other things. This is a good mood lemonade!
In my opinion, stevia does well with lemons and dairy. You need to have a GOOD stevia though! I recommend the ones I think are less bitter. Even my husband will drink this lemonade and he HATES stevia.
Stevia Sweetened Blueberry Lavender Lemonade
4 ½ cups filtered water
1 ½ cups fresh squeezed organic lemon juice (about 8 large lemons’ worth)
1 teaspoon NuNaturals Stevia powder or ½ teaspoon liquid SweetLeaf brand (+ more to taste at end) (or 1 cup sugar sub)
¾ cup organic blueberries (13.05g carbs total ECC or 15.75g of blueberries if you don’t subtract fiber)
Stir together lemon juice, remaining 3 cups water, and 1 teaspoon stevia (if using NuNaturals, ½ if not). Use 2 Tablespoons of this mixture with the blueberries and puree in a food processor or blender. Add puree to lemonade, and add the lavender tea, and stir well. Taste at this point to see if you need more sweetener (we added another ½ teaspoon), more water (if it’s too tart or strong), or even more blueberries. Put in refrigerator or pour over ice cubes and serve!!
