Easy Egg-Free Chocolate Ice Cream

My child can’t have eggs, which makes ice cream bought at the store pretty hard to navigate! He doesn’t eat ice cream often, but it sure made me feel good to adapt this great recipe I found online at Chew Out Loud to a slightly less sweet version! I hope you all enjoy this as much as my son did! This is SO easy and really delicious. You need an ice cream maker.

SUBS: You can substitute firmly packed brown sugar for coconut sugar, and any white sugar for evaporated cane sugar.

Ice cream is a little hard here. For best results, freeze in a separate container! I couldn’t find mine when I made it!

Easy Egg-Free Chocolate Ice Cream

From WooWooMommy.com. Makes about 3.5 cups (less than a quart)

Ingredients

1/2 cup Dutch process cocoa powder, unsweetened 1/4 cup coconut sugar 1/4 cup evaporated cane sugar 3/4 cup whole milk, I used raw 1  and 3/4 cups heavy cream 1 TBLSP vanilla extract – I used mine

Directions

1. Stir sugars and cocoa together.
2. Add milk, cream and vanilla; and stir with a wire whisk until well mixed.
3. Pour into ice cream maker, following directions of your model.
4. Freeze when done, preferably in another airtight container (so it won’t get too hard). Thaw a bit before eating, if super hard (like in picture!)

** You can add mix-ins in the last few minutes, I added chocolate-chips.
